Healthy veggie super green salad

Nutritious, nourishing and delicious and packed full of vitamins. My super green raw salad is certainly one of my favourite recipes. Broccoli, snow peas, spinach, kale, avocado and green apples topped with Goji berries, fresh strawberries and walnuts, provide a power house of goodness all in one bowl.

The lime and avocado dressing is creamy and full of healthy fatty acids coupled with vitamins and antioxidants to make your skin glow.

For the salad:

I green apple sliced into small wedges

2 cups of organic spinach

2 cups of organic shredded kale

1 cup of raw uncooked snow peas washed topped and tailed

1 head of broccoli chopped into very small pieces

1 small avocado sliced into thin wedges

1 cup of fresh strawberries slices in half

2 tbs of Goji berries

2 tbs of walnuts

For the dressing:

Juice of 1 lime

Grated lime zest

Half of an avocado

2 tbs olive oil

Freshly ground salt and pepper

For the salad

Add the spinach, kale and broccoli to a bowl and gently mix together. Add the snow peas, and avocado on top, then scatter the apples, strawberries and goji berries finishing with the walnuts.

For the dressing:

In a small blender add all the ingredients and blend to create a creamy dressing. Store in the fridge until ready to serve and drizzle over the salad.

Tip:

The stalk of the broccoli is highly nutritious though can often be thrown away. Instead slice into long matchstick and add to the salad.
