Super Healthy Chocolate Brownies

Delicious, full of goodness and plant based too.

You will love these moist and fudgy brownies which are hiding an amazing secret ingredient, black beans!

Quick and easy to make and a perfect partner to a cup of freshly brewed Chai tea.

Ingredients

1 x Tin of Organic Black Beans rinsed and drained well (or 250g of Cooked Black Beans)

2 x Tbsp of Organic Cocao

Half cup of Organic Oats

75g Maple Syrup or Honey

2 x Tbsp of Coconut Sugar

40g Coconut oil

2 x Tsp pure Vanilla Extract

Half Tsp Baking Powder

Half Cup of Organic plant based Chocolate Chips or Chocolate broken into small pieces

Half Cup of Walnut pieces or slithered Almonds

Quarter cup pumpkin seeds (optional for colour)

Pinch of Salt

 

Method

  • Set the oven to 175c
  • In a food processor add all the ingredients apart from the chocolate and walnuts.
  • Blend well until you have a smooth texture
  • Stir in the chocolate chips and walnuts saving some for the top of the cake
  • Pour the mixture into a silicone loaf tin or greased 8in cake tin
  • Sprinkle the remaining walnuts and chocolate on top,  slightly pressing down so they don’t fall off when they are cooked.
  • Bake in the oven for 16/18 minutes
  • Leave the brownies in the tray until cooled then cut into squares and place in the fridge where they will firm up a little more.

Delicious on their own or for an extra treat add a small dollop of coconut yogurt.
