Nutritious & delicious: aromatic kale & beetroot bites

Kale & Beetroot, made for each other.

Both packed full of vitamins and minerals and perfect together in any meal.

Beetroots are an excellent source of fibre, folate (vitamin B9) manganese, potassium, iron and vitamin C.

Kale is a nutritional powerhouse, an anti inflammatory and is high in antioxidants.

 

Recipe:

Aromatic spiced kale & beetroot bites

Serves 4

Ingredients

4 Tbsp chickpea flour (Besan flour)

1 cup of chopped roasted beetroot

1 tin of drained and rinsed organic chickpeas

1 cup of fresh kale leaves rinsed

1 peeled garlic clove

1 tsp each of: coriander, ground ginger & cumin

1/2 tsp of ground cinnamon

1/2 large red onion diced

Pinch of salt & pepper

Method:

  • Preheat oven to 180° C (fan oven)
  • In a food processor, add the roasted beetroot, chickpeas, kale, onion, garlic, spices salt & pepper
  • Pulse to a paste maintaining some texture
  • Transfer mixture to a bowl adding the flour and stir through
  • Cover and place in the fridge to firm for an hour
  • Remove the mixture from the fridge dividing into 12 round patties
  • Arrange on a lightly greased oven tray and bake for 20-25 minutes until crispy

Serve with a rocket & orange segment salad, drizzle with a little lemon juice or tahini for a delicious and nourishing meal.
