Quinoa, nut and seed super bread

Everything you need in one bowl to create a powerhouse of ingredients to make our quinoa, nut and seed bread with no yeast in sight.

If you are looking for a healthy change from normal bread that is filled with nutrients, vitamins and minerals this will be a recipe worth trying.

We love this bread so much we make two at a time, slicing one and popping it in the freezer so we never run out.

The best way to eat this delicious loaf is toasted, with nut butter or hummus or avocado, topped with a big handful of spinach for a tasty lunch. You can also change the recipe to make a delicious fruit and nut bread instead by adding dried fruit instead of the seeds and the zest of an orange.

The ingredients are bursting with goodness:

  • Quinoa; naturally gluten free.
  • Flaxseeds; loaded with protein, fibre and omega 3 fatty acids.
  • Psyllium husk; a gel forming fibre which when hydrated supports the gut and colon.
  • Almonds; rich in vitamin E, protein and fibre and a rich source of omega 3 fatty acids which support brain health, memory and concentration.
  • Walnuts; higher in omega 3 fatty acids than many other nuts, Omega 3 from plants including walnuts are called alpha- linolenic acid (ALA).
  • Sunflower and pepita seeds; both full of healthy fats, and vitamins such as vitamin E which acts as a powerful antioxidant in the body protecting cells from damage caused by free radicals. They are also an excellent source of minerals such as magnesium & selenium.
  • Gogi berries; loaded with fibre, iron and vitamins A and C.

Ingredients

Makes 1 loaf

1.5 cups of quinoa flakes

1/2 cup each of sunflower seeds & pepitas (pumpkin seeds)

1/2 cup of mixed nuts, for example almonds, walnuts, brazils – chop into bite sized pieces

1/4 cup of gogi berries (optional, I love the colour speckled through the bread)

3 tbsp psyllium husks

100g flaxseed meal

1tsp salt

3 tbsp macadamia oil

1 tbsp of raw honey (optional)

350ml filtered water

Method

In a large bowl add the quinoa flakes, seeds, gogi berries (if using), nuts, psyllium, flaxseed and salt and stir to combine.

In a small saucepan add water, oil and honey (if using) combining on a gentle heat until dissolved.

Add the liquid from the saucepan to the dry ingredients in the bowl and stir.

Pour the mixture into a silicone bread tin and allow to rest for 2 hours.

After 2 hours preheat the oven to 160° and bake for 45 minutes, then remove from the tin and bake for a further 30 minutes. Bread should sound hollow when tapped.

Allow to cool and enjoy.
